Lindsay's Boulder Deli At Häagen-Dazs
On a gorgeous day, not much can beat a stroll down Boulder’s Pearl Street Mall, except a tasty treat from Lindsay’s Boulder Deli at Häagen-Dazs! Owner, Lindsay Shaw is a long-time fan of delicious ice cream. As a child, she worked at her parents’ ice cream shop and eventually followed suit by purchasing Lindsay’s Boulder Deli at Häagen-Dazs in August of 2004. To accompany the ice cream, Lindsay and her mother poured family love into the menu with ten sandwich creations and three soup recipes. Likewise, Lindsay keeps the menu fresh by allowing her employees to come up with their own recipes. She views her staff as family and encourages them to take ownership in the business. The staff ’s dedication and love is unmistakable and is a true testament to the business’ success.
When the store adjacent to Lindsay’s Boulder Deli at Häagen-Dazs became available, she jumped on the opportunity to expand. In doing so, Lindsay secured a Small Business Administration 7(a) Express loan with the help of Adrianne Tracy of Centennial Bank and Colorado Lending Source. With the funds, Lindsay acquired the unit next door, expanded her storefront and completely renovated the interior with new cabinets, countertops, floors, and beautiful pine beetle kill detailing.
